Poi is made from taro root. Poi is Hawaii's traditional staple, the "Hawaiian potato." It's a mauve to purple colored paste eaten with your fingers, and one-finger poi is thick poi. What's it taste like? Not much. It's the all-purpose additive. People mix it in with whatever they have, or add their favorite seasoning to their bowl of poi. And most everyone uses a spoon, unless you're at a real luau.
